I recommend 100% wool or a wool blend for stitch definition and warmth.

Gauge (in a 10x10 cm / 4x4" square in stockinette stitch), needles and meterage / yardage: 

• 4ply / Fingering: 26 sts x 32 rows, 3.25mm / US 3 needles, 230 (275, 320) metres / 252 (300, 350) yards.
• 5ply / Sport: 24 sts x 30 rows, 3.5mm / US 4 needles, 200 (240, 280) metres / 219 (263, 306) yards.
• 8ply / DK: 22 sts x 28 rows, 4.0mm / US 6 needles, 170 (200, 240) metres / 186 (219, 262) yards.
• 10ply / Worsted: 20 sts x 26 rows and 4.5mm / US 7 needles, 155 (180, 215) metres / 170 (198, 236) yards.

For the samples I used: 

• The blue hat is in The Grumpy Merino 8ply yarn in Mr Dutton colour. This traceable yarn is squishy soft and grown/made in NZ. You'll need 2 (2, 3) balls.
• The green hat is in Fiddlesticks Peppin 10 in colour 1030. It's Australian merino and also squishy soft. You'll need 2 (3, 4) balls.
• The grey hat is in Quince & Co Chickadee in Iceland colour. You'll need 2 skeins for all sizes.
